Vegetarian "Hot-Dog" Soup
Cooking tip: Did you know that you can easily portion out and freeze soup to save for a busy night down the road? When ready to reheat, either microwave or heat up in a pot over the stove with a splash of water.

Ingredients:

  • 2 teaspoons Dijon Mustard
  • 1 tablespoon Sucralose Based Sweetener (Sugar Substitute)
  • 16 ounces Sauerkraut (Solid and Liquids, Canned)
  • 1 teaspoon crumbled Bay Leaf
  • 1/2 medium (2-1/2" diameter) Onions
  • 6 links Smart Dogs Jumbo Veggie Protein Links
  • 29 ounces Bouillon Vegetable Broth
  • 14 1/2 fluid ounces Tap Water
  • 2 tablespoons Extra Virgin Olive Oil

Directions:

  1. Heat oil in a medium soup pot over medium-high heat. Add onion and cook 5 minutes, until softened. Stir in sauerkraut, "hot dogs," broth, water, mustard, sugar substitute and bay leaf.
  2. Simmer 5 minutes for flavors to blend. Remove bay leaf. Add salt and freshly ground black pepper to taste.
