Cooking tip: Did you know that you can easily portion out and freeze soup to save for a busy night down the road? When ready to reheat, either microwave or heat up in a pot over the stove with a splash of water.
Ingredients:
- 2 teaspoons Dijon Mustard
- 1 tablespoon Sucralose Based Sweetener (Sugar Substitute)
- 16 ounces Sauerkraut (Solid and Liquids, Canned)
- 1 teaspoon crumbled Bay Leaf
- 1/2 medium (2-1/2" diameter) Onions
- 6 links Smart Dogs Jumbo Veggie Protein Links
- 29 ounces Bouillon Vegetable Broth
- 14 1/2 fluid ounces Tap Water
- 2 tablespoons Extra Virgin Olive Oil
Directions:
- Heat oil in a medium soup pot over medium-high heat. Add onion and cook 5 minutes, until softened. Stir in sauerkraut, "hot dogs," broth, water, mustard, sugar substitute and bay leaf.
- Simmer 5 minutes for flavors to blend. Remove bay leaf. Add salt and freshly ground black pepper to taste.
