Keto, Homemade Pimento Cheese
Cooking tip: Swap out the store bought mayonnaise with our homemade mayo recipe.

Ingredients:

  • 1/3 cup Real Mayonnaise
  • 4 ounces Vintage White Extra Sharp Cheddar Cheese
  • 1/2 teaspoon Dijon Mustard
  • 1/8 teaspoon Red or Cayenne Pepper
  • 1 tsp smoked Paprika
  • 4 ounces Sharp Cheddar Cheese
  • 2 ounces Pimento (Canned)
  • 1/4 teaspoon Salt

Directions:

  1. Shred cheeses and set aside.
  2. Combine mayonnaise, diced pimento, smoked paprika, Dijon mustard, salt, and cayenne pepper (to your taste) in a small bowl.  Stir with a fork to blend flavors.
  3. Add the cheeses to the mayonnaise mixture stirring to fully incorporate.  Wrap and chill for 2-3 hours before serving for best flavor.  May be kept tightly covered in the refrigerator for 1 week.  Serve with celery sticks or other vegetables.  Each serving is about 2 Tbsp.
