Keto Blackberry-Peach Compote
Cooking tip: If you’ve tried this sauce and like it, try experimenting with herbs and spices to flavor it your way!

Ingredients:

  • 3 medium (2-1/2" dia) (approx 4 per lb) Peaches
  • 1/2 teaspoon Thick-It-Up
  • 2 tablespoons Xylitol
  • 6 ounces Blackberries
  • 1 teaspoon Ginger
  • 4 fluid ounces Sauvignon Blanc Wine
  • 1 teaspoon Cinnamon

Directions:

This sauce is delicious over lemon ice cream or pancakes.
  1. Combine the wine, granular sugar substitute, ginger, ground cinnamon and peaches in a medium sauce pan. Bring to a boil then reduce heat to low and simmer for about 15 minutes until very tender. Add the blackberries and Thick-It-Up; continue to simmer for another 5 minutes. 
  2. Take off heat and cool to room temperature or serve warm. Maybe be refrigerated for up to 1 week. Makes 3 cups; 1 serving = 1/4 cup.
