Baked Red Bell Peppers Filled with Cherry Tomatoes and Feta
Cooking tip: Having a party? When planning your low carb spread, think about which dishes you can make in advance and which need fresh ingredients that day.

Ingredients:

  • 8 Cherry Tomatoes
  • 1 tablespoon Extra Virgin Olive Oil
  • 2 medium (approx 2-3/4" long, 2-1/2" diameter) Sweet Red Peppers
  • 2 tablespoons Basil
  • 2 ounces Feta Cheese
  • 1/2 tsp, ground Thyme (Dried)

Directions:

  1. Preheat oven to 400°F.
  2. Cut peppers in half lengthwise. Remove stems, ribs and seeds.
  3. Gently combine feta, tomatoes, thyme and basil. Fill pepper halves with the mixture.
  4. Place in a baking dish and drizzle with olive oil.
  5. Bake, covered with aluminum foil, for 30 minutes. Remove foil and bake an additional 15 minutes until the tomatoes burst and cheese is golden-brown.
